The 2001 Sterling Vintner's Collection Cabernet Sauvignon expresses the intense character of Monterey fruit in a full and balanced wine. Distinctive aromas of ripe blackberry, pepper, toast and hints of smoked meats are followed by subtle notes of light chocolate mint and vanilla. The palate offers concentrated black fruits, toffee and dark chocolate powder. The texture is full, rich, and soft in the mouth, making it a great match with classic beef dishes, duck confit, assorted cheeses, and dark chocolate.

The Place

Just inland of the Monterey Bay lies our renowned 1,300-acre Paris Valley Ranch Vineyard in the San Lucas appellation of southern Monterey. Surrounded by the Gavilan and Santa Lucia mountain ranges, the property enjoys coastal fog and cool afternoon breezes from the Pacific that temper the warm climate of the Central Coast. These conditions allow for a long, cool growing season resulting in grapes with well-defined varietal character. Grapes for the 2001 Cabernet were grown and harvested from specific microclimates within the property as well as from other local vineyards.
