Baked Stuffed Chicken Breast:
With Mozerella Cheese, Italian Sausage, and Apricot Stuffing, Bistro potato puree, Braised Red Cabbage, and a Whole Grain Mustard Sauce.
Pork Tenderloin:
Roast Pork Tenderloin with Colcannon Stuffing wrapped in Maple Bacon with Carrot and Parsnip puree with a Guiness and Pearl Onion Jus.
Breaded Veil Escalope:
Veal Escalope with an Artichoke Ragout, served over Linguini, tossed with sun-dried tomatoes, Pancetta in a Basil and White WineCream Sauce.
Wild Mushroom and Spinach Ravioli:
Served with a homemade Basil and Red Pepper Pesto.
Yellow Tail Snapper:
Pan Seared Yellow Tail Snapper with a Crab Topping, Bistro Potato Puree and a Lobster Sauce.
Blackened Wild Atlantic Salmon:
Pan Seared and served with Rice Pilaf, Tropical Fruit Salsa,
Toasted Almonds, and a Malibu Coconut Rum Dressing.
Sesame Seared Tuna:
Pan Seared to Rare with a Soya Dressing, Seaweed Salad, Wasabi, and Pickled Ginger.
Kerry Lamb Pie:
Braised Diced Leg of Lamb, with Celery, Parsnip, and Carrot, in a Rosemary Jus, cooked in its own Crock, with a Pastry Bonnet.
Fish and Chips:
Fresh Red Snapper in a light Tempura Batter, with thinly cut Potato Fries and Tartar Sauce.
