About Us
Here is a little background on the makeup of our little Restaurant. Let me start by introducing ourselves to you and raise the curtain on your night out. We aim to carry the show through to the final encore to ensure a memorable experience, for both you and your guests.
The Bistro was born in September of 2002. It is owned and operated by Declan & Maria Hoctor, and Executive Chef: Paul Hughes, and most recently indoctrinated, Geraldine Doyle, our Head Chef. Two other investors make up the ownership of "The Bistro", John & Angela O'Sullivan of Roly's of Dublin (Ireland). Our Cuisine is American with a European flair. Executive Chef, Paul Hughes trained in the Savoy Hotel in London for 9 years, and Head Chef, Geraldine Doyle trained in Roly's of Dublin and L Ecrivian, two of the finest restaurants in Dublin.
Our Sister restaurant Roly's in Dublin was just voted restaurant of the year for 2006, and received similar recognition for the previous 5 years. Our team of Chef's have won numerous competitions and awards representing the Restaurant and Country for their creative and inventive food.
Our front of house team of Declan and Maria Hoctor "Patrons" , Liam Brown "Our Resident Ambassador" and Freddie Rosner "Mein Host" have 100 years of experience in the restaurant business worldwide and are here to cater to your every need. Our Cuisine and warm professional hospitality brought to you by Wally, Allison, Karen and Aidan in the bar, along with Ward, Dana, James, Annette, Bruce, Matt, Jennifer, Ann, Cathy, Lindsay, Luis, Theresa, Lauren and Mike our waiting team, Luis, David, Esteban, Briona, Tito, T.J., Sandro, and Amilca our Bussers, and Karl, Christian, Jean-Claude and Matt in the Kitchen, as well as Pat the Office Manager are the foundation of our success.
